Aromatized vinegars of XOP

 

XOP'S VINEGARS

In order to produce our aromatized vinegars, we use different vinegars as a basis. Amongst them, at XOP we use white Chardonnay wine vinegar, red Merlot vinegar, apple vinegar, and in certain specific cases mirin vinegar (rice vinegar).

Our balsamic vinegar and XOP's sweet & sour vinegar are kept in an oak wooden cask, until their range of aromas mature and reach their optimum balance. In the case of the other vinegars, we do prefer to brighten the original aromas of fruits, herbs and spices

Our vinegar catalogue is as follows:

 

RASPBERRY VINEGAR

It is prepared with natural raspberries, by macerating them in white Chardonnay vinegar

  • Recommended uses: All kind of salads, recipes with cauliflowers or asparagus, stews, and meat sauces
  • Presentation: Transparent glass bottles, 125 ml and 250ml
  • Packaging: Cardboard box, 12 bottles.

 

BALSAMIC VINEGAR

It is elaborated by a similar procedure as Modena balsamic vinegar, by using boiled grape juice concentrate, and maturing the resulting vinegar in oak casks.

  • Recommended uses: All kind of salads and vinaigrettes
  • Presentation: Transparent glass bottles, 125 ml and 250ml
  • Packaging: Cardboard box, 12 bottles.

 

MEDITERRANEAN STYLE VINEGAR

Prepared with basil, oregano and thyme.

  • Recommended uses: All salads, pasta salads, sauces and vinaigrettes.
  • Presentation: Transparent glass bottles, 125 ml and 250ml
  • Packaging: Cardboard box, 12 bottles.

 

XOP'S SWEET & SOUR VINEGAR

Elaborated in a similar way than a balsamic vinegar, that is, by mixing boil-concentrated grape juice that is along with Merlot vinegar, and matured in wooden casks.

  • Recommended uses: All kind of salads
  • Presentation: Transparent glass bottles, 125 ml and 250ml
  • Packaging: Cardboard box, 12 bottles.

 

HONEY VINEGAR

This is a soft vinegar, with low acidity, and little stinginess. It is prepared with orange tree honey, acidified with apple vinegar.

  • Recommended uses: Salads, vinaigrettes (specially in green bean ones!), marinates, sauces and reductions on fish or grilled chicken.
  • Presentation: Transparent glass bottles, 125 ml and 250ml
  • Packaging: Cardboard box, 12 bottles.

 

GARLIC VINEGAR

Made with fresh and roasted garlic in Chardonnay white vinegar.

  • Recommended uses: Perfect in salads, vinaigrettes and marinades. Also on rice, or slightly sprayed on chips
  • Presentation: Transparent glass bottles, 125 ml and 250ml
  • Packaging: Cardboard box, 12 bottles.

 

SICILIAN VINEGAR

Prepared with red wine vinegar, unsalted capers, and basil.

  • Recommended uses: Cooking and seasoning all fish recipes.
  • Presentation: Transparent glass bottles, 125 ml and 250ml
  • Packaging: Cardboard box, 12 bottles.

 

ORANGE-SPICE VINEGAR

It is based on rice vinegar (mirin), and it is prepared with orange peels and fennel. Oriental spices such as cardamom and coriander boost its flavour

  • Recommended uses: All sweet salads
  • Presentation: Transparent glass bottles, 125 ml and 250ml
  • Packaging: Cardboard box, 12 bottles.

 

LEMON VINEGAR

Prepared on a basis of apple vinegar, it has been aromatized exclusively by lemon peels.

  • Recommended uses: Salads, potatoes, and delicate dishes such as fish or seafood ones.
  • Presentation: Transparent glass bottles, 125 ml and 250ml
  • Packaging: Cardboard box, 12 bottles.

 

ASIAN FIVE SPICE VINEGAR

It is produced with rice vinegar, once flavoured with coriander, clove, anise, ginger and pepper

  • Recommended uses: Bringing an exotic touch to any salad
  • Presentation: Transparent glass bottles, 125 ml and 250ml
  • Packaging: Cardboard box, 12 bottles.
