OUR CONDIMENTS The base of XOP's aromatized mushroom oils is a personal mixture of sunflower oil and arbequina extra virgin olive oil. The arbequina olive oil is characterized by is fluidity and extraordinary fragrance. It's a very fruity oil, with light flavors of apple, green grass, little bitterness or pepperiness, and considerable sweetness. In the mouth this is a gentle and very fluid oil with specific attributes of green almond. The mixture of the XOP's diferent oils are decided by a selected olive oil tasters, in a annual meeting at Borges Blanques, the capital of arbequina olive oil. Our aromatized mushroom oils are arranged by infusion in oil of fresh, or mixtures of fresh and dried, mushrooms. OUR MUSHROOM OILS XOP's aromatized mushroom oils are:
BABY OYSTER MUSHROOM OIL This seasoning is produced exclusively with baby oyster mushrooms, by macerating them at a cold temperature in our oil mixture. It has a soft and delicate flavor, likely to be used in cold or warm dishes. In hot dishes, it should be applied just before serving This product is only elaborated in our company, in a worldwide exclusive, since the procedure to obtain it was developed by our R+D+I department
KING BOLETE OIL This seasoning is obtained by macerating dry and fresh mushrooms in oil. Maceration is done at low temperatures, so the overall process is really slow. This allows all aromas to transfer to the oil without modifying the original aromas. At least 6 months are required to achieve the strong aroma we demand.
MUSHROOM OIL XOP produces this seasoning by an accurate selection and "coupage" of his best mushroom aromatized oils. The aim is to achieve a flavor standard, beyond any aroma changes due to season factors. We also have a deluxe edition, containing two bottles with our different oils.
